Ok, the weekend, holiday or special occasion is coming. You’d really like to have pork barbecue for family or guests but you’re not comfortable trying this project on the grill.
Here is a great family recipe two of our favorite things; chicken and cast iron! This is a quick and easy meal ready for the table in about 45 minutes. The dark meat of a leg/thigh quarter has a lot of flavor while staying tender and moist. Pairs great with fresh salad or grilled veggies.
If you grew up eating pork and beans from a can, here is a grown up twist on an age old favorite.
With the last batch of pigs we had processed, there was an option for having some fresh lard made. The pigs produced a fair amount of lard that has a beautiful white color, is full of flavor and adds a real depth to dishes.
